Cornstarch

Potato starch's biggest competitor. According to experts, however, it is corn starch that wins the kitchen competition, giving better results, at least in terms of thickening dishes. It has found its use mainly as a thickening agent for soups, sauces, cakes or noodles.

Application

Combined with hot water (or other liquid), it takes on a sticky, smooth form, slightly matte. It tolerates well even very high temperatures and long processing times, but its properties are reduced in the presence of acidic and sweet ingredients. Interestingly, corn starch can be used to protect food products from sticking together and becoming soggy - this can apply to sweets or some cheeses.
